Gingerbread Cookies

Ingredients (for about 14 large cookies):
1/4 cup coconut oil, melted
1/2 cup coconut sugar
1/3 cup molasses
1/2 tsp vanilla
1 flax egg (Stir 1 tb ground flaxseed with 3 tb hot water and allow to sit for a minute)
2 cups wholewheat flour
1 tsp baking soda
1/4 tsp salt
2 tsp ground ginger
2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground cloves


Instructions:
1. Add coconut oil and coconut sugar to a bowl and stir until very well combined.
2. Add molasses, vanilla, and flax egg and stir.
3. Into another bowl add flour, baking soda, salt, ginger, cinnamon, allspice and cloves. and mix.
4. Add the dry ingredients to the wet, mix into a thick batter, and roll it into a ball.
5. Transfer onto a baking paper and top with another baking paper.
6. Roll out with a rolling pin to around a 1/2 cm thick and cut out into shapes.
7. Bake in a 180°C preheated oven for about 10 minutes.
8. If decorating, allow to cool completely before doing so.
